Red Curry Coconut Quinoa w/ Black Beans

This is a fantastic high protein dish that is completely vegan.  It is great as a meal but can also be served as a side dish.

INGREDIENTS:

  • 2 cups Bob's Red Mill Organic Quinoa (or Alter Eco Fair Trade brand)
  • 2 cups stock (i.e. vegetable)
  • 1 can unsweetened organic coconut milk (regular is best vs. low fat)
  • 1 tsp salt
  • 1 T red curry paste 
  • 1-2 T organic coconut oil such as Barlean's
  • 2 scallions, chopped
  • 1 sweet yellow, orange or red pepper, diced
  • 1 green pepper, diced
  • 1 zucchini, grated or diced
  • 1 yellow squash, grated or diced
  • 1 bunch cilantro leaves, washed and rough chopped
  • 1 can black beans (drained and rinsed)
  • salt & pepper to taste
  • Juice of 1/2 lime

DIRECTIONS:

Cook the quinoa according to package directions using a combination of stock and coconut milk as your cooking liquid with 1 T red curry paste mixed in.  I use a rice cooker and use the 'steam' setting to make mine but you can also do this on the stove.  My only advice is to check the quinoa periodically during cooking and stir it, as coconut milk can sometimes burn.  Once quinoa is almost cooked, turn off the heat, cover and let it sit about 10-15 minutes.

MEANWHILE, get out a large, deep skillet or saute pan.  Add 1 T organic coconut oil and let it melt.  Add the scallions, peppers, zucchini and yellow squash and saute until they just start to soften.  Add the chopped cilantro and black beans and saute about a minute more.  Then gently fluff the quinoa with a fork and add it to the skillet.  Fold everything together gently until quinoa is incorporated.  Continue to heat on medium low until quinoa is heated through.  Season with salt & pepper to taste.  Add a squeeze of fresh lime right at the end before serving.  This is also fantastic with fish or chicken.
