Chicken Nuggets



  These tasty chicken nuggets are pan fried instead of deep fried and make a great healthy alternative to McDonald’s nuggets! Great as a healthy treat for the kids and parties.
There not just for kids but also adult entertaining, try adding fresh herbs such as chopped flat leaf parsley or paprika for a spicy kick!
Serve with sauce as a finger food, or with a side salad for a meal.



Chicken Nuggets ~ Serves 4 as a snack

280g chicken breast (1 large double breast)
2 egg whites
30g breadcrumbs
1 tbs cumin (or your favourite spice)
20g Chicken seasoning (I used Tandaco coating mix for southern fried chicken from Woolworths - if you can’t find this try a combination of coriander and smoked paprika or chicken salt)
1 tsp Salt and Pepper



Lightly whisk 2 egg whites. Dip each chicken piece into the egg whites, then into the bread crumb mixture and coat lightly. Lightly spray frying pan with oil and add chicken pieces. 
Cook chicken in batches (if needed) for 2-3 minutes each side over a medium heat. Serve hot with your favourite sauce or enjoy by themselves.
